UNH 2011

I am a junior Nutrition & Wellness major at the University of New Hampshire. During my studies over the past few years, I have developed a passion for promoting healthy eating and living a healthy lifestyle.

I have worked with the UNH dietitian, Rochelle L’Italien M.S., R.D., L.D., to make some of my ideas come to life on the UNH campus. Currently, I am working on a project called “Creative Eating” which is an approach to making interesting, delicious, and smart choices in the dining halls (or at home).

I have made nutrition information available in brochure form and have been presenting my project in all of the dining halls, in classes, and at campus fairs.  I created take-away cards that are available for those interested in my creative recipe ideas.

There are five basic guidelines that I believe are simple to keep in mind when trying to make smart choices:

1.  Monitoring Portion Sizes

2.  Eating a Variety of Foods

3.  Eating Less Energy Dense Foods

4.  Eating More Nutrient Dense Foods

5.  Thinking Creatively!

I am using this blog to further express my ideas, explore related topics, and to make information readily available to those interested in Creative Eating.

NOTE:  I am a college student exploring nutrition.  This is a personal blog that represents my opinions and ideas.  I do not intend to offend anyone or any party involved.  This blog is not meant to prescribe diets or treat illnesses –contact a health professional for medical information.  Comments left by comment authors are the sole responsibility of the comment authors.  Email me at if you find it necessary for me to remove any content that is sensitive or harmful to you.
